Gluten-Free Fried Wisconsin Cheese Curds Recipe

Wisconsin cheese curds are unlike any other cheese you will find in the United States. Fry it, and you’ve really got an irresistible treat! I decided to put a little spin on the traditional recipe for cheese curds with this gluten-free cheese curds recipe.


  • 4 Cups Vegetable Oil for Frying
  • 1/2 Cup Gluten Free Flour
  • 2 Teaspoons Xanthan Gum
  • 1/4 Teaspoon Salt
  • 2 Tablespoons Milk
  • 1/4 Cup White Cooking Wine
  • 3 Bacon Slices, crunched into pieces
  • 1 Tablespoon Parsley, Chopped
  • 1 Egg
  • 1/2 Pound Cheese Curds (broken apart)


Cooking Instructions

  1. Heat oil in deep fryer or frying pan
  2. Combine flour, xanthan gum, salt, milk, white wine, bacon pieces, parsley, and egg in a bowl. Mix ingredients; batter should be thick.
  3. Completely coat cheese curds in batter.
  4. Place battered curds into heated deep fryer, or frying pan for about 5 minutes, or until curds are golden brown.

The #1 biggest tip I can offer is to use fresh Wisconsin cheese curds. My local market only makes their curds on Thursdays, so I know to stop in on Thursday. Find out from your store when they make their cheese curds.

I did two versions of these: the curds pictured are cooked in vegetable oil in a deep fryer. I also tried pan frying with coconut oil, which worked pretty well. Even so, the flavor of the curds fried in vegetable oil was much more enjoyable :)
